Makes 8 patties
Ingredients
• 450 g canned tuna (in brine or water)
• 500 g potatoes - peeled, cooked and mashed
• 1 small onion - grated finely
• 2 tablespoons chopped parsley
• 2 tablespoons flour
• 1 egg
• Pepper - to taste
• 1/2 cup milk
• Breadcrumbs
Method
1. Drain tuna and in a bowl, combine tuna with all ingredients except milk and breadcrumbs.
2. Shape into 8 patties, flattened slightly.
3. Brush patties with milk. Roll them over breadcrumbs, ensuring that patties are well-coated.
4. Grill patties under moderate heat until they are cooked and golden brown in colour.
5. Serve with salads or stir-fried vegetables and rice for a sumptuous lunch.
