Pumpkin bread pudding with custard sauce

Suitable for toddlers and older children
Makes 8-10 servings


Ingredients


• 6 slices white bread, cubed

• 14 level scoops (or 100g) honey flavored growing up milk powder dissolved in 1-3/4 cups water

• 3 pcs eggs, beaten

• 1 tsp butter, melted

• 1/2 cup mashed steamed pumpkin

• 1/4 cup white sugar

• 1/2 tsp cinnamon powder



Method


1. Preheat oven to 400°F (or 200°C - gas Mark 7).

2. Put cubed bread in a mixing bowl.

3. In another bowl, whisk together the dissolved milk, eggs, butter, pumpkin, sugar and cinnamon powder until well blended and sugar is dissolved.

4. Pour the milk-egg mixture over the bread. Stir mixture just until bread cubes gets soaked.

5. Pour the bread mixture into an 8" x 6" x 2" baking pan (or a 4 cup capacity pan) lined with aluminum foil and steam and bake for about 55 mins. (you may also steam the bread pudding until you reach the stage of doneness just indicated for baking)).

6. Take out the pudding from the oven then cover the top with aluminum foil to avoid excess browning. Return pudding to the oven.

7. Bake for another 20 mins. until a toothpick or a small thin knife inserted in the center comes out clean.

8. Let cool completely. Chill well.

9. To serve: Unmold carefully (right side up with the aluminum foil discarded) then cut into 8-10 slices. Serve with the warm or chilled Custard Sauce.



Custard Sauce


Size per serving portion: about a heaping tbsp.



Ingredients


• 7 level scoops (or 50 g) vanilla flavored growing up milk powder dissolved in 1 cup water

• 1 tsp butter

• 1 tbsp white sugar

• 1 egg yolk, beaten

• 2 tsp all purpose flour



Method


1. Put the dissolved milk, butter and sugar in a heavy-bottomed saucepan. Stir until sugar is dissolved.

2. Scald the mixture over low heat in a heavy-bottomed saucepan.

3. To the beaten egg yolk in a bowl, add in slowly about 1/2 cup of the scalded mixture while stirring constantly. Add in the flour and whisk well until flour is incorporated well. Add this mixture back to the saucepan.

4. Stir constantly over low heat (heat mixture to just a simmer, never to a boil) until mixture thickens then add in the calamansi juice. Cook for a minute more.

5. Remove from heat and transfer to a gravy or sauce boat.

6. Serve warm or chilled with the bread pudding .

This dessert is a superb way of getting your toddler to 'eat' calcium. He will love the natural sweetness of pumpkin combined with bread, milk and eggs. This dish also makes a wonderful birthday party dish, as it's easy to whip up and is an all time favourite with little tots.
