Ingredients
• 240 g self-raising flour
• 160 g margarine
• 100 g castor sugar
• 1 egg (whisked)
• 300 g durian flesh
• 3 tablespoons skimmed milk
Method
1. Using a cake mixer, cream margarine, sugar, durian and egg together till fluffy.
2. Fold in flour and skimmed milk.
3. Spoon cake mixture into muffin cups and bake for 20 minutes at 175°C, or until cup cakes are golden brown in colour.
Note: You may replace durians with three mashed ripe bananas.
