Treat your child to these homemade icy cold popsicles on a hot day. They make wonderful snacks – delicious, thirst quenching and nutritious, they are packed with lots of essential nutrients from milk, fruit juice and fresh fruits.
Fruit Mousse Popsicles
Suitable for: toddlers and older children
Ingredients:
• ½ packet agar-agar powder
• 160 ml cranberry & kiwi juice
• 1 cup fresh fruits (mix two to three types of your child’s favourite fruits)
• 25 g fine sugar
• 150 ml low fat milk
• Egg white from 1 medium egg
• ½ tbsp lemon juice
• Plastic popsicle moulds
Method:
1. Cut fruits into small cubes and set aside.
2. In a pot, bring agar-agar powder, fine sugar and milk to a simmer and boil until the sugar has melted, stirring occasionally. Turn off the fire. Stir in the cranberry & kiwi juice.
3. Using an electric cake mixer (or a whisk), whisk egg white and lemon juice until soft peaks are formed.
4. Gradually pour the agar-agar and juice mixture into the egg white mixture and whisk together to obtain a thick mousse consistency.
5. Spoon 1 tbsp of fruit cubes into a popsicle mould. Fill the rest of the mould with the mousse. Close the cover of the mould and leave in the freezer overnight or for at least 4 hours.
6. To serve, place popsicle moulds under running cold tap water. This eases the removal of the popsicle from the moulds.
