Frutti mousse delight

This colourful dessert is a feast for the eyes. What’s more, the fresh fruits, fruit juice and milk provide lots of vitamins and minerals for your little ones.


Frutti Mousse Delight
Suitable for: toddlers and older children



Ingredients:


• 1 pandan chiffon cake



Filling:


• ½ packet agar-agar powder

• 160 ml cranberry & kiwi juice

• 1 cup fresh fruits (e.g. 1 kiwi fruit, 1 rose apple & 1 orange)

• 25 g fine sugar

• 150 ml low fat milk

• Egg white from 1 medium egg

• ½ tbsp lemon juice



Method:


1. Cut fruits into small cubes and set aside.

2. Line all sides and base of a square container (6 in x 6 in) with aluminum foil.

3. Cut chiffon cake into slices of 1 cm thickness. Place the slices over the aluminum foil, covering the sides and base of the container.

4. In a pot, bring agar-agar powder, fine sugar and milk to a simmer and boil until the sugar has melted, stirring occasionally. Turn off the fire. Stir in the cranberry & kiwi juice.

5. Using an electric cake mixer (or a whisk), whisk egg white and lemon juice until soft peaks are formed.

6. Gradually pour the agar-agar and juice mixture into the egg white mixture and whisk together to obtain a thick mousse consistency.

7. Divide the mousse into three portions and the fruit cubes into two portions. Spoon one-third of the mousse over the chiffon cake slices and spread evenly, followed by the first portion of cubed fruit pieces. Repeat this with the second portion of mousse, followed by the fruit cubes and then the final portion of mousse. Top with a layer of chiffon cake slices. Firmly press down the top layer slightly.

8. Leave in refrigerator to set overnight.

9. To serve, lift the cake out of the container, remove the foil and cut into 1 inch slices.
