Healthy oat bran apple cake

This apple cake is so simple to make and yet so satisfyingly healthful. Apples and oat bran are good sources of soluble fibre, which has many health benefits, e.g. it lowers blood cholesterol and controls blood sugar levels in people with Diabetes.


Healthy Oat Bran Apple Cake
Suitable for: toddlers and older children


Ingredients:


• 1 cup oat bran cereal

• 1 cup (250 ml) reduced fat milk

• 1 cup self-raising flour

• ½ tsp bicarbonate of soda

• ½ tsp ground cinnamon

• ¼ tsp ground nutmeg

• 1/3 cup margarine

• ½ cup sugar

• 1 medium egg

• 1 large Fuji apple, peeled and chopped



Method:


1. Preheat oven to 180 oC. Grease a 6” x 6” baking tin.

2. Soak bran in milk until milk is absorbed.

3. In another bowl, mix the dry ingredients (flour, baking powder, cinnamon and nutmeg).

4. In a cake mixer, beat margarine and sugar until creamy. Add egg and beat well. Stir in the chopped apples, oat bran mixture and the dry ingredients. Mix well.

5. Pour into the baking tray. Bake 40 minutes or until a fork comes out clean.

6. Cool before cutting into 8 to 10 slices.

7. Serve with a glass of milk.
