Mini banana pancakes

Mini pancakes are a delicious snack or breakfast item. They are high in fibre and calcium and low in sugar.


Mini Banana Pancakes
Suitable for: toddlers and older children


Ingredients:


• ½ cup whole-meal flour

• ¼ cup unbleached white flour

• 1 large egg

• ½ tsp salt

• 1 ½ tbsp sugar

• 1 ½ tbsp canola oil

• 1 tsp baking powder

• ½ mashed ripe banana

• ¼ - ½ cup milk
(Maked about 12 mini pancakes)



Approximate Analysis:
Each mini pancake contains about:


• 70 kcal

• 2 g protein

• 3 g fat

• 7 g carbohydrate (of which 1.5 g are sugars)

• 1 g fibre

• 22 mg calcium


Method:


1. Mix all dry ingredients together and in a separate bowl, all wet ingredients together.

2. Pour wet mixture into dry mixture and mix using only a few strokes. DO NOT EVER MIX. Batter should be “pourable”. “Lumpy” batter is fine.

3. Let batter rest for at least ½ hour before cooking.

4. Pour about 2-3 tbsp of batter into a heated non-stick frying pan that has been lightly oiled. Cook on low heat until lightly browned.

5. Serve warm.
