This is a superb milk dessert for your child, especially on a hot day. Cold and delicious, it tempts her to finish every bite of it, while providing her a good dose of calcium, protein and some dietary fibre. Wolfberries are rich in beta-carotene, vitamin C, B-vitamins and other essential nutrients.
Rainbow Milk Jelly
Suitable for: toddlers and older children
Ingredients:
• 1 packet Konyaku (Japanese jelly)
• 250 ml water
• 250 ml milk
• Wolfberries (washed & soaked)
• Canned sweet corn (cut into small pieces)
• Grass jelly (cut into small pieces)
• Chendol (cut into small pieces)
• 2 jelly moulds
Method:
1. In a medium saucepan over medium heat, dissolve the jelly in water, stirring all the time. When sugar is dissolved, turn down the heat and let it simmer for another 5 minutes.
2. Turn off the heat and add milk to the jelly in the saucepan. Stir to mix well.
3. Transfer the jelly and milk mixture to a jug.
4. Fill 1/3 of the jelly moulds with the jelly and milk mixture. Have your child add half a tablespoonful of the rainbow mixture (wolfberries, sweet corn, grass jelly and chendol) into the jelly moulds. Fill the jelly moulds with the jelly and milk mixture up to the top and freeze.
5. Serve the next day.
