Savoury egg custard

Here’s a favourite Japanese dish that you can prepare at home in a jiffy. Delicate in taste and rich in flavour, this high protein dish is suitable for the whole family.


Savoury Egg Custard (Chawan Mushi)
Suitable for: toddlers and older children


Ingredients:


• 100 g lean chicken breast fillet – cut into small pieces

• 4 shiitake mushrooms – cut into small pieces

• 2 medium fishcakes – cut into small pieces

• 3 eggs

• 2 ¾ cups water or chicken/fish stock

• 1 tablespoon light soysauce

• Spring Onions – cut thinly



Method:


1. Combine sliced chicken, mushroom and fishcake and a cup of water in a bowl. Microwave for 5 minutes. Drain and set stock aside.

2. Boil some water in a wok. When water is bioling, turn the heat down to medium.

3. Gently beat the eggs with a fork in a bowl. Stir in stock, the rest of the water and soysauce.

4. Divide the chicken, mushroom and fishball mixture into six portions and place the mixture in each bowl. Full each bowl with the egg mixture.

5. Top with a teaspoon of sliced spring onions.

6. Place the bowls in the wok and cover. Steam for 15 to 20 minutes, or until egg curard is cooked and firm but not hard.

7. Cool and serve.
