These cupcakes smell heavenly and they make the perfect healthy after-school snacks for your children. Each cupcake provides as much calcium as that contained in half a glass of milk.
Steamed pandan cupcakes
Suitable for: toddlers and older children
Ingredients:
• 100 g castor sugar
• 200 ml water
• 200 ml reduced fat milk
• 4 pandan leaves (washed and cut into small pieces)
• 1 egg
• 200 g self-raising flour
Method:
1. In a blender, blenderize the pandan leaves in a small amount of water. Strain and retain the pandan liquid.
2. In a saucepan, melt sugar in water over a medium fire. Turn off the fire and pour syrup into a bowl.
3. Add pandan liquid and milk to syrup and mix well.
4. In a separate bowl, whisk the egg and then add egg into the milk and syrup mixture. Whisk to mix well.
5. Gradually, sieve flour into the liquid, whisking all the time to obtain a smooth and slightly thick batter.
6. Heat a wok filled a third full with water. Place a stainless steel rack in the wok, cover the wok and bring water to a boil. When water is boiling, remove the cover and place six small muffin cups on the rack.
7. Spoon batter into the muffin cups to the brim. Cover the lid and steam for 30 minutes.
8. Remove steamed cakes from the wok and cool. Serve.
