The two main ingredients – sweet corn and water chestnut, give this refreshing dessert a delightful sweet taste and ‘bite’. Key nutrients in corn include vitamin C, folate, vitamin B1, phosphorus, beta-carotene and dietary fibre. Water chestnuts too are a good source of dietary fibre and B-vitamins and contain a fair amount of calcium, iron, potassium and zinc.
Sweet Corn & Waterchestnut Dessert
Suitable for: toddlers and older children
Ingredients for the sauce:
• ½ medium carrot (cubed)
• 500 g waterchestnuts (remove skin and chop finely)
• 2 medium ear sweet corn – remove kernels
• 300 ml water
• 100 g sugar
• 1 tbsp cornflour mixed with 1 tbsp water
Method:
1. In a saucepan, boil water.
2. Add carrot, waterchestnut and sweet corn kernels. Boil for 15 minutes or until carrot and corn kernels are soft.
3. Add sugar, stir well, followed by cornflour mixture to thicken the dessert.
4. Serve warm or cold.
