Slightly sweet and tangy, wolfberries make this bread uniquely tasteful. What’s more, every bite gives your child lots of nutritional goodness.
For instance, wolfberries contain:
- more than 18 amino acids and 21 trace metals
- more beta carotene than carrots
- 500 times more vitamin C by weight than oranges
- High levels of vitamins B1, B2, B6 and E.
Wolfberry and Sunflower Seed Bread
Suitable for: toddlers and older children
Ingredients:
• 350 ml warm water
• 2 tbsp sugar
• 1.5 tsp dry yeast
• 4 cups (560 g) bread flour
• 1 tsp salt
• 1 tsp bread improver
• 50 g low fat milk powder
• 2 tbsp oil
• ½ cup wolfberries
• 1/3 cup (50 g) sunflower seeds
Method:
1. In a small bowl, stir together warm water, sugar and yeast. Let yeast grow for about 5 minutes.
2. In a mixing bowl, add bread flour, salt, bread improver, milk powder, oil, wolfberries and sunflower seeds. Mix well with a wooden spoon.
3. When the yeast liquid becomes frothy, pour in into the dry mixture. Combine well into a dough.
4. Place dough in an oiled bowl, and turn to coat the surface. Cover with a damp cloth. Let rise in a warm spot for 1 hour, or until doubled in size.
5. Punch down and shape into 20 small rolls, and place in greased loaf tin. Let rise for about 15 to 20 minutes.
6. Bake at 200 oC for 20 minutes, or until rolls are browned. Let cool for 10 minutes, and then turn out onto a wire rack to cool completely.
7. Serve.
