Ingredients
Salad Base
• 1/2 cup cubed steamed chicken
• 250 g potatoes, boiled, skinned and diced
• 1/2 large carrot, boiled, skinned and diced (yields 3/4 cup)
• 1/4 cup frozen sweet peas, blanched and drained well
• 1/2 cup cubed unpeeled red apples (use 1 small pce. Gala or Red Delicious variety)
• 15 pcs, green seedless grapes, halved
Salad Dressing
• 1 1/2 tbsps raisins
• 1/4 cup chopped toasted cashew nuts (use unsalted or slightly salted ones)
• 1/2 tsp chopped white onions
• 1/2 cup low fat plain yogurt
• 3 level scoops (or 20 gms.) honey flavored growing up milk powder
• 1/2 cup coarsely grated cheddar cheese
• 1/4 tsp fine salt
Garnishing
• 1 hard cooked egg, sliced, for garnishing)
Method
1. Carefully combine the salad base ingredients in a bowl.
2. In another bowl, mix the ingredients for the dressing and stir until well blended.
3. Pour the salad dressing over the salad base ingredients. Toss the chicken-potato-fruit salad base with the yogurt-milk salad dressing, being careful not to mash the vegetables and fruits.
4. Suggested garnishing: Transfer mixture to a salad bowl lined with lettuce leaves and garnish on top with the sliced eggs.
5. Chill well before serving.
