This is a nutritious and fast to cook snack that is sure to please
everyone in the family. Pair it with rice and vegetables for a balanced meal.
Ingredients
• 750 g cod/mackerel fillets (boneless) - rinsed,
skinned and cut into 3.5 cm pieces
• black pepper (to taste)
• 3 tablespoons corn/soybean oil
• 30 g cornflakes, crumbed
• 1 tablespoon lemon juice
Method
1. Pat fish pieces dry with paper towels. Season with pepper and oil.
2. Place cornflake crumbs in a medium-sized plastic bag. Add fish pieces, give it a good shake to evenly coat each fish piece with cornflake crumbs.
3. Arrange fish pieces in a single layer in a lightly oiled baking dish. Bake at 190°C for 10 minutes or until fish pieces are cooked and golden brown in colour.
4. Sprinkle lemon juice over fish pieces.
5. Serve with some rice and vegetables for a balanced meal.
