Ingredients
• 3/4 kilos lean minced chicken meat
• 3/4 cups quick cooking oats (uncooked)
• 1/2 cup chopped carrots
• 1/2 cup chopped onion
• 1/4 cup tomatoes, chopped
• 1/4 cup tomato paste
• 1 egg slightly beaten
• 1/2 tsp salt (optional)
• 1/4 tsp pepper
Method
1. Heat oven to 180°C (350°F).
2. In a mixing bowl, combine all the ingredients and mix well.
3. Place mixture in a baking pan and press the mixture firmly on the pan with your palm.
4. Bake 55-60 minutes; drain. Let stand for 5 minutes before serving.
Tips
Serve meatloaf with some salads or cooked vegetables and a baked potato or rice and some fresh fruits for a complete meal.
Use leftovers as a sandwich filler for a scrumptious snack
