Ingredients
Mashed potato topping
• 6 pcs medium-sized potatoes
• 1/3 cup milk powder
• salt & pepper to taste
Mackerel mixture
• 500 g mackerel, minced
• 1/2 large onion, diced
• 1/4 cup carrots, minced
• 1/3 cup green peas
• 1/2 tbsp vegetable oil
• 2 tsps corn flour
• 1 tsp soya sauce
• 1/4 cup parmesan cheese (optional)
Method
1. Pre-heat oven to 175°C.
2. Heat oil in a non-stick wok. Sauté onions, mackerel, carrots and peas until cooked.
3. Add the corn flour (mixed with water) to thicken the mixture. Add soya sauce. Mix well. Transfer the mackerel mixture to a baking dish.
4. In a saucepan, boil the potatoes until cooked. Remove the skin. Mash the potatoes using the back of a fork, and blend in the milk. Add salt and pepper to taste. Mix thoroughly to achieve a smooth consistency.
5. Spread the potato topping evenly on top of the cooked mackerel mixture in the baking dish. Sprinkle some parmesan cheese on top of the potato topping.
6. Bake until slightly brown in colour.
