Suitable for toddlers and older children
This is a high protein vegetarian dish that is easy to prepare. The nuts combine well with tofu, giving it a crunchy texture and a nice nutty flavour that your kids will love. High in protein and calcium, tofu contains little saturated fat and no cholesterol.
Ingredients
• 4 medium squares (600g) of firm tofu (chopped)
• 5 dried mushrooms (soaked, washed & sliced thinly)
• 1 medium carrot (peeled & cut into small cubes)
• 100g French beans (sliced thinly)
• 1 medium onion (chopped finely)
• 100g ground almond
• 100g crushed walnuts
• 3 large eggs (lightly beaten)
• 1 teaspoon salt
• 2 teaspoons sugar
• 4 tablespoons light soya sauce
• Pepper
• Oil (e.g. olve, corn or soybean)
Method
1. Pre-heat oven to 180°C or 350°F. Grease a small loaf tin with a little oil.
2. In a large mixing bowl, mix together chopped tofu, mushrooms, carrot, French beans, onion, ground almond, walnuts, eggs, salt, sugar, soya sauce and pepper.
3. Pour mixture into greased loaf tin and bake for 30 to 40 minutes till firm.
4. Remove from oven and allow tofu loaf to cool in the tin for at least 15 minutes.
5. Cut into thick slices and serve with some vegetable or salad.
6. Garnish with lettuce and tomatoes and serve with kitchap manis and chilli.
