This is an easy prepare dish that is well balanced and nutritious.
Ingredients
• 1 cup cooked green spinach noodles
• 1 cup raw spinach leaves
• 1 1/2 cup chicken stock
• 6 boiled quail's eggs
• 1/4 tsp salt
• 1/2 cup frozen corn
Method
1. Microwave frozen corn till cooked. Blanch spinach leaves briefly and discard water (this will help remove some of the phytates present naturally in spinach which reduces iron absorption).
2. Shell quail's eggs. Older children may enjoy shelling the eggs themselves.
3. Bring chicken stock to a boil, add salt (if chicken stock is not already salted).
4. Arrange noodles, blanched spinach leaves, corn and quail's eggs in a deep dish and pour chicken stock over.
