Ingredients
• 2 large eggs (beaten)
• 1/4 cup French beans (thinly shredded)
• 1/4 cup 50g carrots (thinly shredded)
• 1/4 cup bean sprouts
• 2 tbs dried radish (chopped finely)
• 2 tsp canola oil
Method
1. Heat oil in a non stick pan. Add carrots, French beans and fry till soft.
2. Lower heat and add dried radish and bean sprouts. Cook for 30 seconds.
3. Pour beaten egg gently over the vegetables and cook evenly. Flip omelette over for equal browning.
This is a perfect 'one dish' accompaniment to some steamed rice. It is colourful, nutritious and tasty. Vary the vegetables according to the ones your child prefers. It is a good source of vitamins, protein and fibre.
