Spaghettis are an all time favourite with children. What's more, this dish is easy to prepare and makes a well-balanced meal when eaten with some vegetables and a fruit.
Ingredients
• 300 g lean chicken breast (sliced thinly or minced)
• 4 medium tomatoes (chopped)
• 3 tablespoons tomato paste
• 1 tablespoon vegetable oil (e.g. canola, corn oil)
• 1 small can peas
• 2 cloves garlic (chopped finely)
• 1/2 teaspoon oregano
• 1 cup water
• Salt & pepper to taste
• Parmesan cheese (optional)
For paste
• 300 g spaghetti
• 3 litres water
• 1/2 teaspoon salt
Method
1. Chop the garlic. Heat the oil in a non-stick saucepan. Add the garlic and fry until golden brown and fragrant.
2. Add the chicken and fry for 2 to 3 minutes.
3. Add the chopped tomatoes, the tomato paste, oregano and water. Mix well and let it simmer for 20 minutes. Add peas and continue to simmer for another 10 to 15 minutes or until the sauce thickens.
4. In a large pot, boil 3 litres of water, and add salt. When the water is boiling, add the spaghetti. Boil for 5 to 10 minutes or until the sauce thickens.

6. Remove pot from heat and pour the contents into a colander which you have placed in your sink.
7. Rinse the spaghetti under cold water. Drain well.
8. Portion spaghetti onto plates and top with sauce, additional salad vegetables (e.g. thinly slices lettuce) and parmesan cheese. Serve.
Note: When serving to toddlers, cut spaghetti into short lengths to ease chewing and swallowing and prevent choking.
