Suitable for toddlers and older children
Makes 6 servings
Ingredients
• 1 tablespoon oil
• 2 cloves garlic, crushed
• 1 medium onion, chopped
• 1/2 teaspoon mild curry powder
• 500 g sweet potatoes, peeled and chopped
• 2 cups water
• 1.5 cups milk
Method
1. Heat oil in a large saucepan.
2. Sauté garlic, onion and curry powder until soft.
3. Add sweet potatoes and water. Cover saucepan and simmer for 15 minutes or until the sweet potatoes and onion are cooked.
4. Transfer sweet potato mixture into a food processor. Gradually add milk to the mixture, and blend mixture until a smooth consistency is achieved.
5. Return the mixture to the saucepan and heat over a small fire, taking care not to boil, to prevent milk from curdling.
6. Serve with bread rolls.
