Looking for a new soup to whet your child’s appetite? Try this hearty soup, which combines lotus root and mung beans for a unique and yet pleasing taste. Mung beans are high in protein, dietary fibre, potassium, iron and B-vitamins.
Ingredients:
• 1 medium chicken breast (remove skin and fat)
• 1 6-inch long Lotus root (sliced)
• ½ cup raw mung beans (washed & soaked for 1 hour)
• 8 dried red dates (washed)
• 1 piece dried orange peel
• 4 bowls of water
• Salt – to taste
Method:
1. In a large cooking pot, combine all the ingredients.
2. Cook over a slow fire for 2 hours, until the mung beans are soft. Alternately, you can use a slow cooker and cook over a low heat for 4 or more hours.
3. Serve.
