A slurp of this delicious soup will have your little ones begging for more – even if they dislike milk, thanks to the thick and smooth richness of tomatoes which mask the taste of milk. Make their mealtime fun and intellectually stimulating by engaging them in a word game using the alphabets in their soup.
Ingredients:
• 1 kg tomatoes
• 1 tablespoon oil
• 1 onion, chopped
• 1 clove garlic, minced
• 1.5 cups chicken stock
• 2 tablespoons tomato paste
• 1 teaspoon sugar
• 1 cup (250 ml) reduced fat milk
• ¾ cup alphabet pasta
Method:
1. In a saucepan, boil some water. Cut a cross in the base of each tomato and blanch tomatoes in boiling water for 1 minute. Remove tomatoes from saucepan, peel away the skins, discard seeds and chop the flesh roughly.
2. Heat the oil in a large saucepan. Cook the onion and garlic for 3 minutes. Add the chopped tomatoes and cook for 5 minutes, stirring occasionally, until very soft. Stir in the stock. Bring to boil, reduce the heat and simmer for 10 minutes.
3. Cool transfer contents to a food processor. Blend until smooth and return to the saucepan. Add the alphabet pasta, tomato paste and sugar and bring to a boil, stirring continuously. Reduce the heat and simmer, until the pasta is soft.
4. Turn off the heat and stir in milk. Serve.
