For babies 8 months onwards
Makes 5 servings, 1/4 cup per portion
Ingredients
• 3 slices of white bread, (remove crusts, cut each slice into 3 fingers then toast until nicely browned and crispy)
• 1/2 cup + 2 tbsps chicken stock
• 1/2 cup chopped boiled or poached chicken
• 2 egg yolks, beaten
• 6 level scoops milk powder (use one suitable for your child's age) dissolved in 1/4 cup lukewarm stock
• 2 tbsps chopped steamed broccoli
• 2 tbsps canned cream style corn
• 2 tbsps chopped boiled carrot
Method
1. Set aside the toasted bread fingers.
2. Meanwhile, bring the chicken stock to a gentle boil in a heavy-bottomed saucepan.
3. Add in the chopped chicken. Lower heat.
4. To the beaten egg yolk in a bowl, add in the milk dissolved in lukewarm stock and mix thoroughly.
5. Add some of the chopped chicken heating in the stock to the egg yolk-milk mixture.
6. Add this mixture back to the saucepan. Stir until well blended. Cook over gentle heat(heat mixture to just a simmer, never to a boil) until it starts to thicken.
7. Add in the vegetables. Cook for a minute more.
8. Remove from heat. Let cool until just lukewarm.
9. Transfer the chicken a la baby king to a feeding bowl and serve with the toasted bread fingers.
