Ingredients
• 4 small pita bread rounds
Pizza Topping
• 1/2 cup canned tomato paste or fresh tomato puree
• 1 small green capsicum (sliced thinly)
• 250 g fresh pineapple (cut into small cubes)
• 90 g lean chicken breast meat (cooked, chopped)
• 10 button mushrooms (sliced thinly)
• 90 g grated mozzarella cheese
Method
1. Spread each pita bread round with tomato paste or puree.
2. Top with green capsicum, pineapple, chicken, mushrooms and cheese.
3. Place pita bread rounds on non-stick baking trays and bake for 15 to 20 minutes or until pizzas are crisp and cheese is melted and golden brown in colour.
4. Serve.
