Boiled, steamed, pan-fried or cooked in soup, wontons are a favourite with both children and adults. You can serve them as an appetizer, as part of a meal or add them to noodles and some vegetables to make a wholesome lunchtime meal for your child.
Ingredients
• 200 g lean mackerel or chicken (minced)
• 100 g medium prawns (peeled, deveined & minced)
• 4 spring onions, finely chopped
• 1 tsp finely chopped ginger (optional)
• 1 tbsp light soy sauce
• 1 tsp sesame oil
• 1/4 tsp ground pepper
• 30 wonton wrappers
Dipping sauce
• Young ginger - thinly sliced
• 1 tbs chinese red vinegar
Cornstarch mixture
• 1 tsp cornstarch
• 1 tsp water
Method
1. In a bowl, mix the minced chicken, prawns, spring onion, ginger, soy sauce, sesame oil and pepper until well combined. Cover with plastic wrap and refrigerate for half an hour.
2. Taking wonton wrapper in the palm of one hand, place 1 heaped teaspoon of the filling in the centre of the wonton wrapper.
3. Lightly moisten the four edges of the wonton wrapper with the cornstarch mixture.
4. Pick up one corner of the wonton wrapper and fold it diagonally across, to form a triangle. Press edges together to seal.
5. Using your thumb and index finger, gather the three corners of the triangle together, pressing firmly to seal. Repeat with the remaining wonton wrappers.
6. Boil half a pot of water. When water is boiling, gently drop wontons into the boiling water and cook for 3 minutes.
7. Remove wontons onto a plate or bowl. Cool and serve with dipping sauce.
