This delicious snack is easy to prepare and stays fresh if stored in an airtight container. You can replace mashed bananas with cooked mashed pumpkin, which is an excellent source of beta-carotene.
Ingredients
• 1 medium banana (preferably very ripe - mashed)
• 1/2 cup self raising flour
• 1/4 cup sugar
• 1/4 cup canola oil
• 1 medium egg
• 1/4 tsp salt
• 1/2 tsp vanilla essence
(makes 20 mini muffins)
Method
1. Beat oil, sugar, salt, vanilla and egg for about 3 minutes.
2. Add in flour with as few strokes as possible.
3. Stir in banana.
4. Spoon into tiny patty cake holders (about 1inch in diameter).
5. Bake in 170°C oven for about 10 minutes or until light brown.
