Ingredients
• 125g butter
• 1/2 cup sugar
• 1/4 cup rolled oats
• 1 cup plain flour
• 1 tsp vanilla essence (optional)
Method
1. Soften butter and mix with sugar and vanilla essence with a wooden spoon.
2. Mix in oats, then flour.
3. Separate into 2 portions and wrap in cling wrap.
4. Chill in fridge till firm.
5. Take out 1 chilled portion and roll out to about 1cm thick in between 2 sheets of cling wrap.
6. Cut with bear shape cookie cutter.
7. Re-chill dough if it becomes too soft to handle and work on the other portion.
8. Bake in oven at 190°C until lightly brown.
9. Cool and store in airtight container.
Yummy oatmeal cookies that will be a sure treat for even the most fussy eater. Oats are a good source of soluble fibre and it adds a nice nutty flavour and texture to the cookies
