Strawberries and apricot cream cheese on rice cakes

Here's an easy and quick recipe for a yummy change for breakfast!


Ingredients


• 100g cream cheese

• 6-8 dried apricots - chopped finely

• 2 fresh strawberries

• 5 mini rice cakes


Method


1. Mix cream cheese and chopped apricots together. Store in chiller.

2. Chop strawberries into small cubes.

3. Spread apricot cream cheese thickly on rice cakes.

4. Top with strawberries.

5. Serve with a glass of milk.



Note: This is sufficient for one serving.



Your child will be getting more than half of her daily calcium requirements from this meal (with the milk). The vitamin C in the strawberries and the lactose in the milk help with calcium absorption. Strawberries also contain anthocyanins that are responsible for the red colour. Anthocyanins are antioxidants that may have a role in immunity, heart health and cancer prevention. Dried apricots lend a natural sweetness to the cream cheese and contain beta carotene, a powerful antioxidant and a safe source of vitamin A. Vitamin A is needed for healthy vision, skin and immunity.
