Cheesy Veggy Nuggets
No-added-salt Vegetarian No-added-egg
- 1 cup frozen broccoli florets
- 1 cup dry breadcrumbs
- 1 1/2 cups cheddar, grated
- 2 1/2 tbsp water
- 2 1/2 tbsp olive oil
- 1 1/2 tsp baking powder
Stove or oven method:
Heat the oven to 190°C.
Cook the broccoli, then drain and chop well.
Combine with the remaining ingredients and mix well.
Form the mixture into nugget shapes and place on a greased baking tray, about 3 inches apart.
Bake for 20-25 minutes, turning halfway through the cooking time.
Kids love nuggets and this vegetarian version has cheese for that extra calcium boost.
