Breastfeeding is the best for babies and a healthy diet / maternal nutrition is important when breastfeeding. A decision not to breastfeed can be difficult to reverse. Infant formula is suitable from birth when babies are not breastfed. It is recommended that all formula milks be used on the advice of a doctor, midwife, health visitor, public health nurse, dietitian, pharmacist, or other professional responsible for maternal and child care and the financial implications should be considered. All preparation and feeding instructions should be followed carefully as inappropriate preparation could lead to health hazards.

Cream of Mushroom Soup

Ingredients

  • 200 g fresh button mushrooms, chopped
  • 1 large white onion, diced
  • 1 large stalk of celery, diced
  • 360 ml stock (I diluted 1 tbsp concentrated chicken stock with water)
  • 300 ml fresh milk
  • 30 g butter
  • 3 tbsp plain flour
  • Salt and black pepper to taste

*makes 9-10 servings

Stove or oven method:

Melt butter in a cooking pot.

Bake onion until translucent.

Lightly brown the mushrooms, then followed by celery.

Stir in flour and mix well with the ingredients, then add in stock.

Simmer for approximately 20 minutes. Stir occasionally.

Purée in a blender. (If you prefer a chunky soup, do not blend until too smooth)

Pour back into pot.

Add in milk and simmer for another 4 minutes under medium heat. (Be careful not overboil the milk).

Season with salt and black pepper.

Tips:

Serve with homemade garlic bread for a light lunch or as a starter to dinner.​​
