Breastfeeding is the best for babies and a healthy diet / maternal nutrition is important when breastfeeding. A decision not to breastfeed can be difficult to reverse. Infant formula is suitable from birth when babies are not breastfed. Purple Sweet Potato Soup

Ingredients

  • 3 medium size purple sweet potatoes, skinned and cut into chunks
  • 1 slice old ginger, patted flat
  • 4-5 pandan leaves, washed and tied into bundlkes
  • 600 ml water
  • Sugar to taste (brown sugar is also fine)

Stove or oven method:

Put pandan leaves, old ginger and water in a cooking pot.

Bring water to boil, then lower the flame to medium low heat. Simmer for 10 minutes.

Add in purple sweet potatoes and simmer until it turns soft. It takes about 10 minutes.

Remove pandan leaves and ginger slice. Add in sugar and stir until sugar dissolves thoroughly. Serve warm.

Tips:

Purple sweet potatoes require a shorter time to turn soft compared to yellow, orange and pink sweet potatoes. If you use other varieties, adjust the sizes of the chunks and cooking time accordingly.

This oriental boiled dessert soup is a delicious way to add nutritious sweet potatoes to your toddlers diet. Sweet potatoes come in various colours, but the purple variety tends to be sweeter and the fastest to soften when cooked.​​
