Salmon Fish Cakes with Potato Recipe
No-added-salt
Ingredients
- 200 g tin of pink or red salmon, drained, with skin and bones removed
- 1 egg, beaten
- 250 g cooked potato, mashed
- 50 ml light olive or vegetable oil
- 2 slices of white bread, crusts removed and chopped finely or blended into breadcrumbs
Stove or oven method:
Flake the salmon and mix with the mashed potatoes.
With floured hands, form four fish cakes. Then dip the fish cakes into beaten egg before rolling into breadcrumbs.
Finally, fry the fish cakes in a shallow pan for 2-3 minutes on each side until crispy and golden.
