- 2/3 cup white sugar
- ¼ cup margarine, softened
- 2 eggs
- 3 bananas, mashed (about 1 cup)
- ¼ cup water
- 1 2/3 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ¼ tsp baking powder
Stove or oven method:
Preheat oven to 175°C.
Beat the white sugar and margarine until smooth and creamy.
Beat in the eggs, water and bananas with the sugar mixture until well blended.
Mix in flour, baking soda, salt and baking powder just until the mixture is moistened.
Spray one 9x5x3 inch loaf pan with a non-stick cooking spray and pour batter in.
Bake at 175°C for about 60 minutes, or until top is firm and golden brown.
Remove from pan, cool and slice.
